Bright and clean ruby red colour with deep tawny hue. On the nose it shows red ripe berries, cherries and gooseberries, as well as liquorice, vanilla, cinnamon, chocolate and mineral hints. On the palate its balsamic, with well balance acidity and noticeable toasty barrel notes. A very elegant aftertaste with persistent mineral and spicy aromas. Decanting its recommended.

Winemaking
Grapes are closely selected in our vineyards before harvesting and in our sorting tables. The Harvest took place by hand on late august and early September 2017. After destemming and pressing the grape bunches, each grape variety ferments on its own in stainless-steel vats at 20ºC with temperature control for 15 days. After the malolactic fermentation ends, the blend is done. The wine is then aged in American and French oak for 19 months and it then spend 2 more years in the bottle. This wine has been filtered and clarified before bottling. It will evolve positively for more than 10 years.

The soils are calcareous sand and clay with gross elements of gravel and rocks. The Tramuntana mountain range limits our vineyards preventing frost and cold winds, but also providing mist and clouds during the hot summer days. It also provides natural subterranean water for our older vineyards. The grapes used for the winemaking of this wine were from our best and oldest vineyards of over 30 years old.
The weather its Mediterranean with hot and dry summers and soft and humid winters. 2017 was a dry year with a little over 400 mm of rainfall and temperatures in the summer reached 33ºC and temperatures as low as 5ºC in the winter.

On the palate it’s elegant, mineral, with spicy hints of clove and balsamic that give it freshness and a long tasty finish.

Winemaking
Grapes are closely selected in our vineyards before harvesting and in our sorting tables. The Harvest took place by hand on early September 2017. After destemming and pressing, the must starts fermenting in stainless-steel vats at 20ºC with temperature control for 15 days.
After the malolactic fermentation ends, the wine has been stabilized. Then aging starts in American and French oak for 22 months and it then spend 1 more year in the bottle. This wine has been filtered and clarified before bottling. The final bottling was 484 bottles of 1500 mL and 217 bottles of 750 mL. Our RAF 2017 can still age for another 8 years.

Our vineyards are located in the D.O. Binissalem Mallorca, in the villages of Binissalem, Biniali, Santa María and Sencelles. The soils are calcareous sand and clay with gross elements of gravel and rocks. The Tramuntana mountain range limits our vineyards preventing frost and cold winds, but also providing mist and clouds during the hot summer days. It also provides natural subterranean water for our older vineyards. The grapes used for the winemaking of this wine are from vineyards of over 50 years old.
The weather its Mediterranean with hot and dry summers and soft and humid winters. 2017 was a very dry year with less than 400 mm of rainfall and temperatures in the summer reached 38ºC and temperatures as low as 2ºC in the winter.

Straw yellow colour with greenish gleam bright and clear.
On the nose brings aromas of tropical fruits (pineapple) as well as citric fruits (orange and lemon) with grass and forest floor aromas as well as vanilla hints.
On the palate is fresh, dry with medium high acidity and hints of asparagus and lemon zest. It has a long finish with vanilla and citric hints after taste.

Winemaking
Grapes are closely selected from the vineyards and in our sorting table. The Harvest took place by hand during mid-August 2021. To prevail freshness and aromatic expression we use dry ice to cool down the grapes for transportation and pressing. After destemming and pressing the grape bunches, each grape variety ferments on its own in stainless-steel vats at 15ºC with temperature control for 15 days. As fermentation ends, the wine is aged in lees for 7 months. 40% of the wine is aged in French oak barrels for 3 months. The final blend is filtered, clarified and bottled in March 2021 before its release to the market.

The Sauvignon blanc vineyards are young and located in the D.O. Binissalem Mallorca in the village of Biniali. The soils are calcareous sand and clay with gross elements of gravel and rocks. The Tramuntana mountain range limits our vineyards preventing frost and cold winds, but also providing mist and clouds during the hot summer days. These vineyards are in very dry soil nevertheless during the summer of 2021 no irrigation was required.

On the visual it shows a pale pink salmon colour with medium intensity, clean and bright.
On the nose aromas of red fruits (cherry, raspberry and strawberry), liquor fruits, rose petals and caramel hints.
On the palate its dry, with medium acidity, fresh and balance. It shows flavours of cherry, grapefruit, fennel and vanilla. It is dense and liqueur with medium finish leaving licorice candy aftertaste.

Winemaking
Grapes are closely selected from the vineyards and in our sorting table. The Harvest took place by hand during mid-September 2021. We proceed with destemming and storing the grapes in stainless steel vats for maceration for a short period of time for a “sanguine” method afterwards and continue with fermentation. The fermentation was done a control temperature of 18°C for 15 days. The wine is then stabilized and age in lees for 7 months. This wine is only filtered and then bottled previous to its release to the market in March 2021.

After destemming and pressing the grape bunches, each grape variety ferments on its own in stainless-steel vats at 15ºC with temperature control for 15 days. As fermentation ends, the initial blend is done with Prensal blanc, Chardonnay. Shortly after we blend the Muscat and Manto negro. Three months after, the final blend is done. This wine has been aged on lees as well for 6 months. The wine has been filtered and clarified before bottling (March 2021).
